Meet Paul Zahlen, and you’ll immediately sense it — passion runs through everything he does. Whether as a football coach, IVV employee, or winemaker, Paul approaches every project with heart and dedication.
In 2021, his dream became reality: founding his own winery, inspired by the vines once tended by his grandparents. With the help of family, friends, and colleagues, Paul built a place where sustainability and experimentation define the unique signature behind each bottle.
He loves to try new things — Pét-Nats from Pinot Gris, spontaneous fermentations, and minimal sulfur reveal just how alive his wines can be.
Paul’s vision for the future is clear: a small, personal winery that speaks directly to people and delivers wines with real character. Natural cultivation, upcoming organic certification, and the use of PIWI grape varieties ensure fresh, vibrant wines that tell their own stories.
Playful names like “TauxKapp” or “Miseler Flodi” show that for Paul, enjoying wine should always be fun.
